During Sheva Brachot in Jerusalem, we had a killer salad made by the groom’s aunt, Aunt Toby. Made with bok choy (one of our faves, by the way), the salad was quite tasty.
Aunt Toby’s Killer Bok Choy Salad
One medium bok choy cut into bite sized pieces.
One bunch of scallions diced into pieces.
Sautee together:
2 1/2 ounces sesame seed
1 or 2 ounces sliced almonds
2 packages of ramen noodles
Garlic powder to taste
Pour over the bok choy.
Dressing:
Mix together
2 tablespoons soy sauce
1/4 cup cider vinegar or rice vinegar
1/2 cup sugar or other sweetener
3/4 cup oil
Pour over bok choy. Chill and serve.
