Incredible Fruit Pizza!

Ok, this has got to be the cat’s meow!! A pizza made from cookie dough and fruit! How yummy is that?

Crust:
1 pkg. refrigerator sugar cookie dough
OR 1 small recipe sugar cookie dough

“Sauce”:
1 (8 oz,) pkg. cream cheese, softened
1 c. confectioners sugar
3 Tbsp. lemon juice

Topping:
3 to 4 cups fruit
(Assortment of strawberries, blueberries, raspberries, mandarins, and kiwi, whatever sounds good to you!)

Glaze:
1 c. orange juice
1/2 c. lemon juice
2 1/2 Tbsp. cornstarch
1 c. sugar

If using refrigerator dough, slice and spread dough on a large pizza dish. Press the circles of dough down so that there are no spaces and you have one giant cookie!

Bake in a 450 degree oven for 10 to 15 minutes. After baking, the entire bottom of the pan should be covered with one giant cookie.

Combine cream cheese, confectioners sugar, and 3 Tb. lemon juice in a food processor till very smooth. Spread on top of cooled cookie crust. Slice
fruit and arrange on top of the cream cheese mixture. You can do concentric circles, starting with strawberries on the outside, then kiwi, then
raspberries, then mandarins, then blueberries, or hey get creative!

Combine all glaze ingredients in a saucepan. Cook over a medium heat, stirring constantly, until it boils. Cool. Poor cool glaze on top of pizza. Chill in the refrigerator until ready to serve.
