MATZAH CARAMEL PECAN SQUARES

We have been making this dessert item for several years now, and everyone loves it! The recipe originally came from

4 sheets of matzah
1 cup of brown sugar, packed
1 cup margarine
1 cup chopped pecans
1 cup semi sweet chocolate chips
Some people also add slivered almonds (we don’t)

Spray bottom of jellyroll pan (or baking sheet with sides) (15 1/2″ X 10 1/2 X 1 1/8 or larger) with vegetable spray. Line pan with matzahs.

In a medium saucepan, combine margarine, brown sugar and pecans. Heat over medium-high heat. Bring to a boil, stirring with wooden spoon. Reduce heat to medium and boil for two minutes, stirring constantly. Pour over matzah. Bake at 350 degrees for 7 or 8 minutes.

Remove from oven and immediately sprinkle with chocolate chips. Return to oven and bake for only 2 or 3 more minutes (ie, just to melt chocolate). Warning: DO NOT OVERBAKE!

Remove from oven. You can swirl the top into a nice pattern. Or, you can skip it. If you are adding almonds, sprinkle them on now. Let cool between 10 and 20 minuts. Cut into squares. Be careful as it will still be hot.

Remove the squares to wax paper to finish cooling.
