Spinach Balls

A delicious finger food, great for any party or just to have for the fun of it! Enjoy!

2 – 10-oz. packages frozen chopped spinach
2 cups grated toast
1 large onion, grated
4 eggs, beaten
3/4 cup melted margarine
1/2 cup grated kosher Parmesan cheese
salt, pepper, garlic powder to taste

Thaw, rinse and drain spinach. Combine all ingredients. (This takes a lot of garlic powder. Consider it enough when you are able to actually discern the garlic flavor in the raw mixture. It’s a key to the final product.) Chill one hour. Roll into small balls (about size of a large walnut to ping-pong ball). Place on a cookie sheet. Bake at 350 F for 20-25 minutes. Serve hot (can tolerate coming to room temperature).
