PECORINO CHEESE

Recently we had a special treat at a friend’s house. We were treated to some imported pecorino cheese from Italy.

Certified Kosher Cholov Yisroel by Rabbi Sholom Elmaleh of Milan, Italy, the cheese was a gustatory delight!

Pecorino is a sheep’s milk cheese. It has a most hearty flavor.

We had PECORINO SARDO- a flavorful sheep’s milk cheese. It is tasty both alone and grated over pasta or salad.

Our suggestion: this is a cheese that has to be bought both fresh and NOT pre-grated. Grate the cheese yourself so that it does not lose flavor. Tightly wrap any unused cheese and store it in the ‘fridge.

We had some over a really good arugula salad with pears and nuts, and it was superb.

It is a very hard to find cheese, but worth the search. If all else fails, try www.kosheritalia.com
