A low fat soup that tastes like a “cream of” soup! Great for those long winter nights. Best of all it’s a parve soup! Yeah!
Pumpkin Soup
2 Large onions/diced
4 Tb olive oil
2 tsp dried thyme
2 tsp dried basil
1 tsp nutmeg
1 tsp cinnamon
1 Tb sugar
1 Tb salt
2 tsp ground pepper
3 Large carrots cut into chunks
1/2 bunch parsley, chopped
3 Large potatoes, peeled and cut into chunks
6 Cups fresh pumpkin, peeled and cut into chunks
8 Cups Vegetable stock
Heat oil in pan, saute onions until they sweat and are soft, but not brown, about 7-9 mins. Add all of the remaining ingredients.
Bring to a boil. Cover and let simmer for about 45-60 mins. until veggies are soft. Puree soup with a braun hand mixer or in a food processor until smooth. Adjust seasonings.
Makes 10-12 servings
