Unstuffed Cabbage

This is the most wonderful cabbage stew. It’s stuffed cabbage, unstuffed! Enjoy!

1 Cup Diced Onion
6 – 8 Cups diced Cabbage
2 – 15 oz Cans Tomato Sauce
1 – 28 oz Can Undrained Stewed Tomatoes
(can add another can of any size if desired or needed for additional liquid)
1-1/2 Cups Water
1/2 Cup Brown Sugar
1/3 Cup Lemon Juice

Put all the above ingredients in a large (preferably heavy) pot. Bring to a boil over medium heat, stirring ocassionally.

Meanwhile make the Meatballs:

1 to 1-1/2 lbs ground beef
2 T Worchester Sauce
1 to 1-1/2 Cups Raw White Rice

Mix ingredients together and form into meatballs.

When the “soup” is boiling drop in meatballs. Stir gently to get the meatballs covered. (*before you add the meatballs make sure you have enough liquid. If not you can add more stewed tomatoes, or tomato sauce or water, whatever you prefer. Taste it to make sure you have enough brown
sugar/lemon juice)

Cook over a low to medium heat for a couple of hours until the meatballs are done. Stir gently as the meatballs will fall apart if you are too rough 🙂

This is one of those, try as you go along recipes. It’s like your bubbe’s recipe where you have to taste it as you go and make adjustments. It’s well worth the effort!
