Snow Pea Salad

A delightful salad that is perfect for that Sunday brunch. It’s as pretty to look at as enjoyable as it is to eat!

Snowpea-Citrus Salad with Poppyseed Dressing

4 cups fresh snow-peas
1 cup whole red seedless grapes (I used more)
1 cup fresh orange sections (2 large oranges)
1 cup fresh grapefruit sections (2 large grapefruits)
1 cup mandarin oranges
1 green bell pepper, cut into julienne slices
1 small red onion, sliced into thin slivers
1/2 cup dry-roasted sunflower seeds

Poppyseed dressing (see recipe)

Snip ends of snowpeas and discard. In large bowl, combine snowpeas, grapes, orange sections, grapefruit sections, mandarin oranges, green pepper slices, onion slivers and sunflower seeds.

Toss salad with 1/2 to 3/4 cup poppyseed dressing, or to taste.

Yield: 8 to 10 (1-cup) servings.

Poppyseed Dressing

2 cups granulated sugar
1 1/4 cups white vinegar
3 1/3 cups vegetable oil
8 teaspoons poppy-seeds
1/4 cup dried onion flakes
2 teaspoons dry mustard
3 1/2 teaspoons salt

Stir sugar into vinegar; mix with wire whisk until blended. Whisk in oil. Add poppyseeds, onion flakes, dry mustard and salt. Mix well. Store
in refrigerator for up to 3 weeks.

Yield: 6 cups.
