GRILLED CUMIN CARROTS

Makes: 4
Serving Size: 2 carrot halves
Preparation Time: 5 minutes
Cooking Time: 16 minutes

Ingredients
4 large carrots, peeled,
cut lengthwise in half
1 Tbsp. olive oil
1 tsp. ground cumin
1/4 tsp. kosher salt
1/8 tsp. freshly ground black pepper
1 Tbsp. minced fresh cilantro
Directions

Coat a grill rack from an outdoor gas grill with cooking spray and set it 6 inches from the heat source. Preheat the grill to medium.
Bring a 3-quart saucepan of water to boiling. Add the carrot halves and boil for 4 minutes. Drain well and pat dry.
Drizzle the carrots with olive oil to coat. Sprinkle with cumin, salt, and black pepper.
Add the carrot halves to the grill rack. Cover and grill for about 6 to 7 minutes. Turn the halves over and grill covered another 6 to 7 minutes, or until the carrots are slightly charred and soft.
Transfer the carrots to a platter and sprinkle with cilantro.
