CALIFORNIA SUMMER COLE SLAW

Ingredients

1 small head cabbage, shredded
1 small white onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small carrot, shredded
1/2 cup cider vinegar
3 tablespoons white sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup vegetable oil

Directions

In a large salad bowl, place the cabbage, onion, green bell pepper, red bell pepper and carrot. Combine the vinegar, sugar, salt, pepper and vegetable oil in the bowl with the vegetables. Toss the mixture until the vegetables are fully coated with the marinade.

    This is very much like the cole slaw we make all the time. We have been advised by Canadian friends that this is Canadian style. One major change: we use at least one or two cloves of garlic. Another change: green onion, not white. The white onion would be too strong a flavor. My preferences is for less sweetness, so we omit carrot and red bell pepper. This slaw keeps well and in fact is better if it sits for an hour or so before you serve so the marinade can blend in with the cabbage. We use green. If you use red, you’d want it to sit longer.
