Cabbage/Sausage Saute (Diabetic Safe)

What You’ll Need:
  • 1 large onion, chopped
  • 2 carrots, thinly sliced
  • 6 cups coarsely shredded green cabbage
  • 1 (14-ounce) package  sausage, cut into bite-size pieces (We prefer Jack’s Gourmet Sausages)
What To Do:
  1. Coat a large nonstick skillet with cooking spray. Over medium-high heat, cook onion and carrots until just tender, stirring occasionally.
  2. Reduce heat to medium and add cabbage and sausage. Cook, covered, 15 to 20 minutes, or until cabbage is tender, stirring frequently.
