Roasted Tomatoes


What You’ll Need:
  • 4 medium-sized tomatoes
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
What To Do:
  1. Preheat the oven to 450 degree F.
  2. Cut the tomatoes in half, remove the stems, and lightly squeeze out some of the juices.
  3. Combine the remaining ingredients in a small bowl. Rub the mixture onto the tomatoes and place them cut side up in a 9″ x 13″ baking dish. Bake for 20 to 25 minutes until soft but not mushy.

Why not add 1/4 teaspoon of dried dill weed, basil, or oregano, too? Use this recipe as a starting point and make these your own, as a side dish or for adding to cooked pasta or rice. So, depending on how you use them, the yield really will vary.
