BAKED ORZO (We love this one!)

From the UTJ’s Southern Test Kitchen, Chef Andrea presents another recipe:

Baked Orzo

Ingredients:

1 lb orzo, cooked, drained and rinsed

1 large onion, finely chopped

1 lb. mushrooms, sliced

2 cans french fried onion rings

Margarine (1 stick)

3 sort of heaping Tablespoons of chicken consume or soup mix

Very lightly brown onions in margarine

Add Mushrooms

Mix in Orzo with Mushroom & Onions

Add dry chicken soup

Add one can French Fried onion rings

Bake 20 minutes at 350

Spread another can of Onion Rings on top

Bake another 15 minutes or until crisp & browned
