Passover Carrot Ring

This is a great addition to your seder menu. Try it, and you’ll be making it year after year! It also freezes really well!


4 Cups cooked mashed carrots
1/3 Cup finely chopped onion
2/3 Cup Matzah meal
4 eggs, lightly beaten
1-1/4 tsp salt
1/2 tsp black pepper

Mix carrots, onion, and matzah meal in a bowl. Add eggs, salt, pepper and mix well. Turn into a WELL greased 5 Cup ring mold. Bake at 350 for 30-40
mins. (until well set) Cool a few minutes, then loosen edges and turn onto a plate.
