HUMMUS “FRIED” CHICKEN

1 pound boneless, skinless chicken breasts
1/2 cup of your favorite hummus
2 lemons: one sliced into rounds, and 1 juiced
4 sprigs of fresh rosemary or 2 TBS dried
1 tsp of balsamic vinegar
Salt and pepper to taste

Preheat oven to 450F. Place chicken in a small roasting pan and slather on the hummus. It should be about 1/4 inch thick. Scatter lemon slices and rosemary over the chicken. Drizzle with half the lemon juice and all of the vinegar.

Bake until the hummus is golden brown and the meat is tender and juicy- about 30 minutes. CHECK THE BIRD TO MAKE SURE IT IS DONE- USE A KNIFE!

Top with remaining lemon juice and salt and pepper.
