STUFFED FRENCH TOAST

Here is a great recipe we found in Cook”s Country magazine. We hope you will enjoy it.

Ingredients:
6 ounces of
softened cream cheese
3 tablespoons of sugar
1/4 teaspoon of cinnamon
1 large egg
1 cup of cold water
1/2 cup of all purpose flour
1 teaspoon of vanilla extract
4 tablespoons of unsalted butter
Maple syrup
8 slices of large, good quality sandwich bread

Combine cream cheese. sugar and cinnamon in a medium bowl. Spread the mixture on four slices of bread. Top with remaining four slices of bread. Press down on the tops, forming four tight sandwiches.

Combine egg, flour, water and vanilla in a shallow pie plate. Melt 2 tablespoons of butter in a large non stick skillet over medium heat. Dip both sides of the sandwiches in the batter and place in skillet.

Cook until golden brown on both sides (about three minutes per side). Repeat with remaining butter and bread.

Cut into triangles and serve immediately with warm maple
syrup.
