MINTED WATERMELON POPSICLES- GREAT FOR YOUR KOSHER BBQ!

MINTED WATERMELON POPSICLES

1 1/2 pounds seedless watermelon without the rind, cut into 1 inch cubes. (about 4 cups)
2 Tablespoons sugar
1/4 cup minced mint leaves
2 teaspoons grated lemon zest
a pinch of salt

In a blender, puree the watermelon with the sugar until smooth. Stir in the mint, grated lemon zest and salt.

Pour the puree into 8 popsicle molds or into two standard ice cube trays.

When it starts to quicken, insert popsicle stix into the cubes.

Freeze until hard- about three hours.
