Chick Pea Salad

Here a chick, there a chick, everywhere a chick chick — A high protein, delicious summer salad coming your way! Quick and easy too!

Chick Pea Salad

19 oz garbanzo beans, drained
2 T red onion, chopped
2 cloves garlic, minced
1 tomato, chopped
C chopped parsley
3 T olive oil
1 T lemon juice
Salt and Pepper to taste

In a large bowl, combine the chick peas, red onion, garlic, tomato and parsley. Add in olive oil, lemon juice and salt and pepper to taste. Chill for at least two hours before serving. Taste and adjust seasonings.
