About the Author: Aviva Allen is a nutritional consultant and chef in Toronto, Canada. After completing her studies at the Canadian School of Natural Nutrition, she spent three months at the Isabella Freedman Jewish Retreat Center in Connecticut with the Adamah program, an opportunity that allowed her to integrate organic farming and sustainable living with her background in nutrition. While working the land, Aviva gained an appreciation for the intimate connection between the daily food choices we make and the impact it has on our bodies and the environment. She went on to study at New York City’s Natural Gourmet Cookery School; a chef training program which focuses on health-supportive, vegetarian cuisine with an emphasis on traditional and unrefined ingredients. Teaching people to make healthy choices is very important to Aviva. Outside of her nutritional practice and private cooking lessons, Aviva teaches nutrition in the Holistic Health program at Seneca College.
