Potato Muffins (Passover)

Ingredients:
2 eggs
2 cups water
¼ cup oil
¼ cup matzo meal
6 oz. Package potato pancake mix

Directions:

Preheat oven to 400°

Beat eggs until well blended. Add oil & water. Stir in matzo meal and potato pancake mix. Allow to thicken for 3 minutes.

Fill greased muffin tins and bake at 400 degrees for 40 minutes or until golden brown .
