Quick Lemon Linguini with Cucumbers and Mint

8 ounces dry linguini
1 1/2 tablespoons olive oil
Juice and zest of 1/2 lemon
2 small green onions, chopped
1/4 cup chopped fresh mint
1 teaspoon freshly ground Italian seasoning
1 medium cucumber, chopped
Prepare linguini according to package directions. Meanwhile, whisk together oil, lemon juice and zest, onions, mint and seasoning. Drain pasta and toss with lemon-oil mixture and cucumber. Serve immediately, or chill and serve as a cold noodle salad.
Active time: 15 minutes.
Total time: 15 minutes.
