CARROT KUGEL FOR ROSH HASHANAH

This carrot kugel tastes like carrot cake. Because it is so simple to prepare, it will add to your holiday meal without adding to your holiday workload.
Prep Time: 15 minutes
Cook Time: 1 hour

Ingredients:

* 2 cups grated carrots
* 3 tablespoons orange juice
* 1 cup margarine, softened
* 1/2 cup brown sugar
* 1 egg
* 1 1/2 cups whole wheat flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon cinnamon

Preparation:
1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celcius). Spray a baking pan with non-stick spray.
2. Using a food processor, finely shred carrots. Mix carrots with juice. Set aside.
3. Using a mixer, beat margarine and sugar. Add egg. Add dry ingredients. Lastly, add carrots. Mix well.
4. Pour batter into pan. Bake, uncovered, for 1 hour.

YIELDS: 8 servings.
