PINEAPPLE FARFEL SURPRISE
1 box (ie, 6 cups) matzah farfel
8 eggs, beaten
11/2 to 2 teaspoons of vanilla
2 sticks margarine ( 1/2 stick for pan, remainder for recipe)
16 ounce can of crushed pineapple, including the juice
1 bag (12 or 16 ounces) of mixed dry fruit, minced (optional)
2 teaspoons cinnamon
9 x 13 deep pan, greased with the half stick of margarine
Pour hot water over farfel and drain immediately.
Melt the margarine
Beat eggs, margarine, vanilla, pineapple, dried fruit (if you desired) and cinnamon
Add to matzah farfel and mix well.
Bake in 350 degree oven for 45 to 60 minutes.
Remove from oven and allow to set before cutting
