Awsome WonTon Appetizers

I’m preparing for an 80th birthday party for my mother and came up with the following recipe – these are really good and pretty easy too! (This receipe makes at least 100 appetizers!)

24 oz mushrooms – cleaned and chopped well
1 whole onion (I prefer peruvian sweet onions) chopped finely
4 or 5 good sized cloves of garlic – super finely diced or smashed
1 can diced green chilies (the larger can)
1 bunch cilantro – chopped fine
salt and pepper
1/2 cup bread crumbs
24 oz montery jack cheese – cut into small cubes

2 pkgs WonTon wrappers (there are 50 wrappers in each package)

Oil for frying

Saute the chopped mushrooms, onion and garlic till very tender. Add green chilies and cilantro. Season with salt and pepper to taste. Stir until all ingredients are mixed well and hot.

Remove pan from stove and drain mixture in a strainer. Just until most of the liquid is gone. Put into a bowl. Add bread crumbs and mix well. Add cheese cubes and mix well. Let it sit while the cheese melts. Stir a couple of times.

Get out the wonton wrappers. Take one wrapper and using your fingers, wet all four sides. Put a heaping teaspoonful of filing in the middle of the wrapper. Fold over wrapper and press firmly. You now have a triangle. Set aside on a cookie sheet. Continue until you have made all of the wontons.

In a frying pan, heat oil til a drop of water really sizzles in the oil. Add about 7 or 8 wontons. Cook briefly, until wonton turns lightly brown, flip and do the same to the other side. Remove and drain on a towel.

After the oil is good and hot, the step above takes about 30 seconds from start to finish.

You can serve right away with a dipping sauce (or not) or you can freeze them. I use an aluminum pan and put them in the freezer. To use: Defrost and warm in a 350 degree oven til hot.
