CILANTRO LIME MAYO

We had a huge hankering for poached salmon the other day. It might have been due to finding this recipe in the current issue of Bon Appetit magazine.

Anyway, we tried it; we really liked it!

In a food processor, blend the following five ingredients until the leaves are finely chopped.

1 cup of packed fresh cilantro leaves
3 tablespoons of fresh lime juice
1 peeled garlic clove
1 teaspoon Dijon mustard
1/4 teaspoon of hot sauce

Now add 3/4 cup of mayo and process just to blend. Put it all into a small bowl. Season with salt and pepper if you are so inclined.

Cover . Chill out while the bowl is chilling in the fridge.
